The firm flesh of Norwegian Cod characteristic a lean, large flaky structure and a tender-firm texture makes it an ideal for a wide variety of dishes. Pacific Cod tend to have thicker fillets with a higher moisture content and are therefore tender-firm. Their flesh has a delicate white color when raw and remains white after cooking.
